1 1/2 c. sugar
1/2 c. unsalted butter
*1 . thick whipping cream, soured w/1 tsp. vinegar
2 eggs
1/2 tsp. salt
*2 tsp. baking powder
1 tsp. soda
1/2 tsp. lemon extract
1/2 tsp. vanilla extract
4 1/4 c. flour

*High Altitude: add 1 tbsp. milk, subtract 1/8 tsp. baking powder, add 1/4 c. flour

Prepare soured cream. While it sits, beat sugar and room temperature butter until creamy. Add soured cream while stirring. Add eggs one at a time, stirring after each. Add all the dry ingredients at once, stir, then add the extracts. Stir thoroughly.

Dough will be very light; a pastry cloth is recommended or you may want to add more flour. Roll no thinner than 1/4 in. Cookies puff in oven, small cutters work best.

Bake at 350 for 10-12 min.

Frost with a buttercream or sour cream frosting
