1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 tsp vanilla extract
5 cups all-purpose flour
2 tsp baking powder
1 tsp salt

Directions:
Directions:
Preheat oven to 400ºF.
In large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder and salt.
Wrap and chill dough for 1 hour, or overnight. *
Roll out dough to 1/4" to 1/2" thick. Cut into shapes.
Place cookies 1" apart on ungreased cookie sheets.
Bake 6 - 8 minutes.

* At this stage, I often form the dough into long sausage-shapes and wrap in greaseproof paper.
Some of the dough I leave in refrigerator and the rest I put in freezer bags and freeze for later use.
To use the frozen dough: just warm up enough so that it can be cut thinly into circles, bake as above.
