1 1/2 cups oatmeal
1 cup wheat flour
3/4 cup brown sugar
1/2 tsp salt
1/4 cup honey
2 egg whites
1 tsp vanilla
1 1/2 cups boiling water
1 cup flour
1/2 tsp soda
1 tsp cinnamon
1 cup applesauce
2 tbsp. margarine, melted
1/2 cups chopped apples

Directions:
Directions:
Preheat oven to 325º. Pour boiling water over oats. Stir and let stand for 20 minutes. Combine flours and next ingredients in bowl. Set aside. In a small bowl, whisk together honey, applesauce mixture to oats and stir until smooth. Add oat mixture to flour mixture and stir until dry ingredients are moistened. Fold in chopped apples. Bake for 25 minutes. Sprinkle each muffin with cinnamon sugar if desired
