1 c. sugar
1/4 c. all-purpose flour
1/2 c. juice from cherries
3 c. tart red cherries, drained, frozen & thawed (or canned), and pitted.
1 Tbsp. soft butter
4 drops almond extract
Pastry for 9 inch lattice-top pie
1/4 tsp. salt

Directions:

Preheat oven to 450º
Combine sugar, flour and salt
Stir in juice
Cook and stir over medium heat until thick; cook 1 minute longer
Add cherries, butter, extract, salt, and 10 drops red food coloring
Let stand; make pastry
Line 9 inch pie plate with pastry; fill
Top with lattice crust
Flute edges
Bake for 10 minutes
Reduce heat to 350º and bake for 45 minutes longer

Use 1/3 more sugar when using additional cherries
4 heaping cups of fresh cherries for a large pie and 4 regular cups of cherries for a small pie
