1 1/2 onion chopped
1 rib celery chopped
1 clove garlic minced
1/2 tsp chopped jalapeno
3 Tbsp oil
4 lbs ground beef
8 Tbsp chili powder
1 Tbsp cumin
2 tsp garlic salt
1/4 tsp Tabasco
1-12 oz can beer
1/4 c water
1- 14 oz can stewed tomatoes
1-8 oz can tomato sauce
1-6 oz can tomato paste
1-4 oz can dried green chilis
1 bay leaf
salt & pepper to taste

Directions:
Saute chopped vegetables in oil until onion is transparent. Add meat and cook until beef loses its redness. Combine chili powder, cumin, garlic salt, Tabasco, salt & pepper with 8 oz of the beer. Let stand 1-2 minutes. (The remaining beer is for the cook to drink)
put all ingredients to meat mix. Simmer, covered on low for 3 hours, stirring often. Remove bay leaf before serving.
