1 c. (2 sticks) butter or margarine, softened
1 c. granulated sugar
1 egg, separated
1 tsp. almond extract
2 c. sifted all-purpose flour
1/2 c. blanched sliced almonds
1 Tbsp. sugar
1/2 tsp. ground cinnamon

Directions:
Preheat oven to 350º
Beat butter and sugar until fluffy light in a large bowl with electric mixer
Add egg yolk and almond extract, blending thoroughly
Stir in flour
Turn cookie dough into an ungreased 15 x 10 x 1 inch jelly-roll pan
Spread evenly to edges with a spatula
Beat egg white until just foamy white; spread evenly over cookie dough; spread nuts on top
Combine the 1 Tbsp, sugar with cinnamon; sprinkle over nuts
Bake in a moderate oven for 19 minutes, or until lightly browned
Remove from oven; let cool in pan on wire rack
Cut into 8 lengthwise strips, then into 12 diagonal cuts to form diamond shapes
Let cool thoroughly in pan; remove carefully with spatula
(This is a Danish butter cookie at its core...and VERY GOOD to eat!)
