4 egg whites
1/2 tsp. cream of tartar (opt.)
1 cup shortening (not butter)
2/3 cup sugar
2 tsp. vanilla
4 egg yolks
1/2 tsp. baking powder
1/2 tsp. baking soda
2 c. tapioca flour
1/2 bag chocolate chips

Directions:
Directions:
Preheat over to 350 degrees. Beat together egg whites and cream of tartar until stiff. Set aside. Cream shortening and sugar together. Beat in vanilla and egg yolks. Add baking powder, baking soda and tapioca flour. Stir well. Fold in whipped egg whites and 1/2 bag of chocolate chips. Bake in a greased bundt cake pan for 35 minutes or until done. Invert pan and tap cake out of pan onto a wire rack. Allow to cool completely.
