1/2 cup low-sodium soy sauce
1/2 cup dark brown sugar, packed
2 tbsp. rice wine vinegar
1 tsp sesame oil
1 1-inch piece of fresh ginger, peeled and sliced
1/4 to 1/2 tsp crushed red pepper
2 1/2 lbs pork boneless shoulder or roast, closely trimmed and cut into 2-inch pieces (do not substitute pork tenderloin, the dish will be too dry)
3/4 lb soba noodles
2 red bell peppers, thinly sliced
1/2 lb snow peas, trimmed
Chopped roasted peanuts for topping

1) In a 4-6 quart crockpot, combine soy sauce, sugar, vinegar, oil, ginger and crushed red pepper. Add pork and toss to coat. Cover and cook until pork is tender, on low 7-8 hours, on high 4 to 5 hours.

2) Fifteen to twenty minutes before serving, cook the noodles according to package directions, adding the bell pepper and snow peas during the last minute of cooking, drain.

3) Transfer the pork to a small bowl, set aside. Pour the pork cooking liquid into a large skillet (you may want to add a few tbsp. of chicken broth if the liquid is already thick) and boil until slightly thickened, 4 to 5 minutes. Add the pork and toss to coat. Serve pork over noodles and vegetables, topped with peanuts, and other toppings as desired.

This yummy recipe could use a little more crunch and heat. Sprinkle the cooked meat with toasted sesame seeds, scallions and additional red pepper as well as the peanuts. Be sure to use low sodium soy sauce.
