Mini Bacon and Cheese Quiches Recipe

Ingredients: Cooking spray 36 wonton wrappers 8 slices bacon, cooked and crumbled 1 small onion, chopped 1/4 cup red bell pepper, chopped 1/2 cup broccoli, chopped 1 cup egg beaters (or 4 eggs) 1.5 cups evaporated milk (I like 2%) 1 cup shredded cheddar (or any) cheese (I like 2%) Salt & Pepper

Directions:Preheat oven to 350º Spray a mini-muffin pan with cooking spray Gently press 1 wonton wrapper into each cup Spray edges of wonton wrappers with cooking spray (don't worry if they won't stay down, when you add the filling it will all work out)
Make the filling - In a small skillet, saute onion for about 3 minutes Add red bell pepper and broccoli and saute another 2-3 minutes (you can throw in other veggies too if you want) Set aside to cool.
In a large bowl, whisk together eggs, milk and cheese. Stir in bacon and cooked veggies Add some salt & pepper and stir well
Fill wonton wrappers with about 1 tablespoon of filling mixture
Bake until quiche mixture is set and edges of wrappers are lightly browned - about 20 minutes. The quiche will puff up some, then settle |
