8 oz (1 cup) dried lentils
3 tbsp. olive oil
3-4 slices of bacon, cut into small pieces
1 onion, finely chopped
2 celery sticks, finely chopped
2 carrots, finely chopped
2 rosemary sprigs, finely chopped
2 bay leaves
400 grams (14 oz) chopped tomatoes
3 pints (7.5 cups) vegetable stock
Salt & Pepper to taste

Heat olive oil in a large pan
Add bacon and cook for about 3 minutes
Stir in the onion and cook for 5 minutes, or until soft
Stir in celery, carrot, rosemary, bay leave and lentils
Toss over and heat for 1 minute, until thoroughly coated in oil
Tip in the tomatoes and stock and bring to boil.
Lower the heat, half cover the pan, and simmer for about an hour.
Remove bay leaves
Salt and Pepper to taste
