2 tbsp. olive oil
1 1/2 lbs sweet or hot Italian sausage
2 medium carrots, thinly sliced on the bias
1 onion chopped
Salt and black pepper
1 15 oz can white beans, drained and rinsed
3/4 cup dry white wine
1 tbsp. fresh tarragon leaves, or 2 tsp dried tarragon

Directions:

1) Fry sausage in 1 tbsp. olive oil in a large skillet. Cook 10 to 12 minutes cooked through. Remove from skillet, drain on paper towels at least 10 minutes, then slice.

2) Wipe out skillet. Heat the remaining tbsp. of oil over medium heat. Add the carrots, onion, 1/2 tsp salt and 1/4 tsp pepper. Cook, stirring occasionally until tender, about 10 minutes.

3) Add the beans and wine, reduce heat and simmer for 5 minutes. Fold in sausage and let reheat. Add tarragon for last minute of heating and serve
