4 C Dried pinto or Anasazi Beans
3 strips raw bacon or 1C any cooked meat chopped or shredded
1 onion chopped
3 cloves garlic finely chopped
1/2 C green chili, canned or frozen OR 1 T red chili powder
1 small can sweet corn if using pintos
10 C water

Directions:
Directions:
Sort dried beans removing small rocks or beans showing mold. Place all ingredients in a pressure cooker and seal well. Turn burner up to high until pressured up then turn down. Pintos cook for 45 minutes - 1 hour. Anasazi 1 hour - 1 1/4 hours. Do not remove lid until pressure has completely dropped. Serve as a soup with desired garnish; grated cheese, chopped green onion, green chili gravy, soft corn tortillas or flour tortillas.

I have never cared for beans but I'm a fan of these. I believe they are specific to southwest Colorado. Anasazi beans were discovered in a sealed urn at Mesa Verde. The beans where taken to the Hesperus Agriculture Station to see if they would sprout as some did! They did so well they are now grown commercially. They are also one of the few vegetables that have a complete protein which is why the corn is not needed to complete the protein.
