Ingredients: 1 cup red lentils 5 cups water 1/2 tsp. tumeric 1 small onion, diced 1 clove garlic, chopped fine 1 tsp. Garam Masala 1/2 cup fresh cilantro, chopped fine 1 Thai chili chopped fine, or 1-2 tsp red chili flakes (optional)

Directions:In a saucepan, rinse the lentils a few times in cold water - drain. Add 5 cups of water, salt and tumeric to this an place on medium high heat
Bring to a good boil, and let boil for about 5 minutes. The water will foam a little, this is ok. Then, reduce heat and let simmer for about 25 minutes.
While the dal is simmering, saute on medium, heat the oil, add onion and saute until just past golden... this takes a few minutes, don't rush it. Add the ginger and garlic and saute for another minute. Remove from heat.
After the dal has started to thicken (it will be like a creamed corn or pea soup slurry type of consistence - about 20 minutes) add sautéed onion mixture, Garam Masala and fresh cilantro. Finish cooking, about 3 more minutes or so.
Serve with rice or naan.

Notes: This recipe comes from an Indian cooking class I took. It is the best dern Dal you will ever taste. It's not like the dal you get in an Indian restaurant, which I always found to be bland. The number of servings is suggested at 4, but you might consider it only 1 serving - it's that good!
