1 large can chicken (11-13 oz), drained
1 can condensed cream of chicken soup
2 hard boiled eggs, sliced thin
1 stalk celery, finely sliced
1 small jar of pimentos (you can leave this out, b/c they are a little pricey, but it wont be as pretty or as yummy)
1 tbsp lemon juice
2 tbsp onions, finely chopped
salt and pepper (i just shake each for a few seconds)
2 pie crusts (uncooked - the kind that are rolled up and need to be refrigerated; I use Kroger brand)
Pie Dish
Melted Butter to Drizzle on top

Directions:
Directions:
Put all of the ingredients in a bowl and mix it up minus the pie crust of course and butter for melting on top. Then you:
Put one pie crust in the bottom of the dish, make sure to poke holes in it so it doesn't explode!
Put the mixed filling in the middle and flatten with a fork, then put the other pie crust on top and make sure to cut slits in the top so the pie can breathe
Pinch the edges of the pie together and cut off the excess (you can make decorations for fun on top).
Drizzle butter on the top so it doesn't burn.
Cover the edges of the pie with foil to keep them from burning (take it off about 5 minutes before the pie is done)
Bake for 30 minutes at 400º.
