Leg of lamb
1 to 2 cloves garlic
salt and pepper
1 onion, sliced
lemon juice
1 6-ounce can tomato paste
4 to 6 cups boiling water
1 lb. orzo pasta
parmesan cheese

Directions:
Directions:
Prepare lamb and season with salt and pepper. Insert pieces of garlic in slits made in meat with a sharp knife. Place in baking pan and add onion slices. Bake in a 425º oven for 30 minutes. Reduce heat to 350º. Baste meat with lemon juice and return to oven until met is done and well browned. Remove meat and onions from pan. Add tomato paste and boiling water to pan drippings. Sprinkle orzo past in baking pan slowly and return to oven. Stir occasionally. When pasta is cooked, remove from oven and allow to stand, covered with a towel, for a few minutes. Cut up meat and mix into the pasta with the onions. Sprinkle with parmesan.

This is a yummy recipe that is great to make with leftover roast lamb. You would skip the beginning part and cut up the lamb and one slice onion and start from where the lamb is done cooking.
