1 1/2 c shredded cheddar cheese
3 eggs
3 T. flour
2/3 c. mayonnaise
1 (10 oz.) pkg frozen chopped spinach, thawed and squeezed dry
1 (8 oz.) can sliced mushrooms drained
cooking spray

Directions:
Directions:
Heat oven to 350º.
In large bowl, toss together cheese and flour, set aside. In a food processor, whirl the prepared spinach, eggs and mayonnaise until blended. Mix into bowl with cheese, add drained mushrooms and mix well.
Spray an 8x8 or 9x9 pan with cooking spray. Pour in and smooth the spinach mixture.
Bake for 30 - 40 minutes.
Can be used as an appetizer.
