6 c. torn mixed salad greens or romaine
2 medium tomatoes, cut into wedges, or 8 cherry tomatoes, halved
1 small cucumber, halved lengthwise and thinly sliced
1 small red onion, cut into thin wedges
1/2 c. pitted kalamata olives
1/2 c. crumbled feta cheese (2 oz)

Vinaigrette:
2 T. olive oil
2 T. lemon juice
1/2 tsp. dried and crushed oregano
1/8 tsp. salt
1/8 tsp. pepper

Directions:
Directions:
In a salad bowl, combine vegetables and feta cheese. Add Greek Vinaigrette; toss to coat.

Greek Vinaigrette: In a screw-top jar combine 2 T. olive oil; 2 T. lemon juice, 1/2 t. dried and crushed oregano, 1/8 t. salt, 1/8 t. pepper. Cover and shake well.
