1/2 - 3/4 pound skinless salmon, cut in half (2 pieces)
1 pound asparagus - use first inch (tops) only
1 cup mushrooms, sliced
1 sheet puff pastry
1 egg, beaten
fresh dill
butter, salt & pepper
Horseradish cream sauce (buy pre-made or mix 4 tbsp. sour cream, 4 tbsp creme fresh, 2 tsp. wet horseradish, 2 tsp. dill and salt to taste)

Bring puff pastry to almost room temperature, so it can be worked.

Saute asparagus & mushrooms in butter.
Add dill, salt & pepper at end of cooking, toss and set aside to cool a little

On a lightly floured counter top, roll out puff pastry to a size that can be folded up over the salmon

Carefully put pastry on parchment paper (or lightly oil sprayed foil) on a cookie sheet
Put veggie mix (avoid any liquid from cooking) on the center of the pastry
Put salmon on top of veggies
Sprinkle with dill, salt, pepper and spread some of your horseradish cream sauce on top
Fold pastry up and pinch together over salmon
Brush egg on top of pastry
Put in fridge and turn on the oven (375º)
In about 10 min or when the oven is ready, remove from fridge and bake for about 15 min or until crust is nice & golden brown

This recipe is one I made up using another recipe as a guide. It turned out really good and looks fancy so it would be good for a dinner party. You can let the pastry sit in the fridge for a couple of hours if needed - but don't put the egg wash on it until cooking time.
