1 pound Salmon filet (cut into 4 servings)
4 tsp. McCormick's Caribbean Jerk Seasoning
2 tsp. Cinnamon Sugar Mix (half each)
Butter flavor cooking spray (Pam)

Salad Greens
Nuts (I like candied pecans)
Sliced Strawberries
Raspberry vinaigrette

Pre-heat oven to 375˚– 400˚ depending on the thickness of the fish (if it’s a thick cut, use 375˚)

- Line a cookie sheet with aluminum foil
- Put the Salmon on the cookie sheet skin side down – do not oil the foil, you want the skin to stick
- Spray the Salmon with Pam
- Sprinkle 1 tsp McCormick’s Caribbean Jerk Seasoning (or more = more spicy) on each filet
- Sprinkle 1/2 tsp cinnamon sugar on each filet
- Spray with Pam again
- Bake uncovered until almost done (10 min or so)
- Change the oven to Broil for the last couple of minutes

*Serve with mixed greens tossed with fresh sliced strawberries, nuts & raspberry vinaigrette

This is my go-to salmon recipe. It's perfect on a summer night with a glass of wine. Can be done on the BBQ.
