1 large orange quartered
6 cups frozen cranberries
1 1/4 cup sugar
1/4 cup apricot or peach preserves
1 cup fresh or canned, drained and crushed unsweetened pineapple
2 tbsp. lemon juice

Directions:
Directions:
Chop the orange in a food processor. Mix cranberries and sugar in sauce pan over medium heat until berries pop, stirring often, about 5 minutes. Transfer cranberry mixture to food processor with the chopped orange. Add preserves, pineapple, and lemon juice. Process until the consistency is smooth. Cover and refrigerate until chilled.
