4 eggs 2 C Shredded Zucchini
1 C milk ¾ C chopped green onion
2/3 C butter, melted ¾ C Cheddar cheese, grated
3 C Country Style Biscuit mix ¾ C Swiss cheese, grated
2 ½ C Canadian Bacon, chopped ¾ C Provolone Cheese, grated

Directions:
Directions:
• Preheat oven to 350 degrees then grease muffin tins
• Combine eggs, milk, butter and biscuit mix until moist
• Stir in ham, zucchini, green onion and all cheeses until coated with batter and evenly distributed
• Scoop batter into jumbo tins – bake 25 to 30 minutes
• Scoop batter into mini tins – bake 15 to 18 minutes

This recipe came from a young man that Bruce worked with many, many years ago. This is a great breakfast item or serves as a great appetizer at a cocktail party in mini muffin size. This recipe yields lots of muffins but they freeze well.
