12 Extra large egg yolks
Grated zest of 2 large lemons
1 C fresh squeezed lemon juice
1 ½ C sugar
1 C unsalted butter

Directions:
Directions:
• Whisk egg yolks then add zest, juice and sugar; whisk to combine
• Set over medium heat in double boiler; stirring constantly with a wooden spoon insuring that you stir the sides and edges of the bowl
• Cook until mixture is thick enough to coat the back of a wooden spoon
• Remove from heat; add butter on piece at a time stirring with a wooden spoon until the mixture is smooth.
• Transfer to a medium size bowl; lay a piece of plastic wrap on the surface of the lemon curd to prevent a skin from forming; chill until firm or at least 1 hour.
