Ingredients: Ό butter (1 stick) Ganache:
1 C Flour ½ C heavy whipping cream
1 C Sugar 8 oz semi sweet chocolate chips
4 Extra large eggs 1 tsp instant coffee or espresso grounds
1 16 oz can Hersheys choc syrup
1 Tablespoon vanilla extract

Directions: Heat oven to 325 degrees. Butter and flour an 8 inch round cake pan; line bottom with parchment paper.
Cream butter and sugar in bowl of electric mixer fitted with paddle attachment until light and fluffy
Add eggs, one at a time then mix in chocolate syrup and vanilla. DO NOT OVERBEAT or the cake will be tough
Pour the batter into the pan and bake for 30 to 35 minutes or until just set in the middle. Let cool thoroughly in the pan.
Ganache: Cook cream, chocolate chips and coffee granules in the top of a double boiler over . simmering water until smooth and warm
Place the cake on wire rack and pour glaze of the top making sure to cover the entire cake and sides. Use an offset spatula to smooth out if needed.
Decorate with fresh raspberries, strawberries or crumbled gold leaf do not refrigerate after icing. |
