6 small potatoes, peeled and thinly sliced ( about 3 cups)
1/4 c. minced onion
3 tbsp. butter or margarine
2 tbsp. flour
1 tsp salt
Dash of pepper
1-3/4 c. milk

Directions:
Directions:
Spray vegetable oil into a 1-1/2 qt casserole dish. Place 1/2 of the potatoes in the dish. Sprinkle half of the onion over the potatoes. Melt butter over medium heat, add flour, salt, and pepper, add milk. Stir constantly and bring to almost a boil. Remove and pour 1/2 of mixture over potatoes in casserole dish. Repeat with remaining potatoes, onion, and sauce. Cover and bake in oven at 350º for 1 hour.
