1 medium potato, boiled and mashed, reserve potato water
2 packs yeast
1/2 cup warm water
1 tablespoon sugar
2 eggs
1 cup sugar
1 tablespoon salt
1/2 cup shortening
7 cups flour

Directions:
Directions:
Dissolve yeast in warm water. Mix with 1 tablespoon sugar and mashed potato. In large bowl, mix 2 beaten eggs, 1 cup sugar, salt and shortening. Add water to potato water to make 2 ½ cups. Add yeast and water. Add 4 cups flour and beat well. Continue adding flour until dough is not sticky. Put in greased bowl and grease top. Let rise 2 hours. Punch down and knead well. Let rise again for 1½ hours. Roll and cut. Let rise 1½ to 2 hours, uncovered. Fry and sugar. Makes approximately 4 dozen.
