whole chicken , cut into 8 pieces
1 onion sliced
1 clove garlic crushed and sliced
1/2 cup white wine
1/2 cup chicken stock
1 28 oz can whole tomatoes
Herbs:
Dried oregano
Dried basil
Rosemary
Fresh parsley chopped
Salt
Pepper

1 red bell pepper sliced
Sliced mushrooms of your choice

Preheat oven 275 degrees

In a heavy bottom sauté pan heat olive oil. Salt chicken . Place flour in a dish and cover all chicken pieces with flour shaking off excess. Place chicken in pan and brown on all sides. Once the chicken has browned add onion and garlic, sauté for 3 to 5 minutes - add wine cook for a few minutes, until it has reduced slightly . Add the chicken stock and tomatoes, herbs salt and pepper. Add all vegetables (red pepper and mushrooms).

On stove top cook all ingredients for 10 minutes. Place in oven and cook at 275 degrees for 1.5 to 2 hours.
