2 skinless, boneless chicken breast halves
1 1.27-ounce packet dry fajita seasoning – divided
1 15-ounce can black beans – rinsed and drained
1 11-ounce can Mexican-style corn
½ cup salsa
1 10-ounce package of mixed salad greens
Chopped onion and tomatoes to taste
Shredded cheddar cheese

Directions:
Directions:
Rub the chicken with ½ packet of the fajita seasoning. Grill chicken. Cool and chop. In saucepan, mix the beans, corn, salsa and the remaining fajita seasoning. Heat until warm. To serve, place greens in a serving bowl or on a platter; top with onion and tomatoes. Top with the chicken and then the bean mixture. Sprinkle cheese over the top.
