5 ib. beef (mixture of boneless stew and brisket)
3 ib. pork (pork butt or belly pork)
1 flour bag or rice bag (30" x30")
1/2 c. Hawaiian rock salt
30 cleaned luau (taro) leaves, (frozen cooked luau leaves may be used)
4 green ti leaves with stems
1 ib. salted salmon
1 ib. butterfish
cotton string
large pot with rack or a steamer

Cut beef and pork into serving- size blocks. Massage them with salt, and keep separated in individual bowls. Spread out flour bag and place seven ti leaves in center. Cut off bottom of stems for later use. Place luau leaves in center of ti leaves. Place beef on luau leaves and pork on top of the beef. Place salmon and butterfish on the sides of beef. Cover with remaining ti leaves. Grab ends of sack material and tie together. Tie bundle with cotton string and place on rack in steamer. Do not let water touch bundle; elevate with stems from ti leaves. Need to steam laulau, not boil it. Bring water to a boil in pot and maintain low flame. Steam for 4-5 hours, or until the beef and pork is falling apart. Turn flame off and let stand covered for 30 mins.
