12 thin slices veal
salt & pepper to taste
6 slices Swiss cheese
6 slices Boiled ham
1/2 c. Bread crumbs
1/2 c. Flour
Paprika
2 Eggs, beaten
1/4 c. Oil
2 T. Butter
1 c. Chicken stock
1 t. tomato paste
1/2 c. Marsala or sweet wine
1 T. cornstarch

Directions:
Directions:
Pound veal til flattened & season with salt & pepper. Place 1 slice each cheese and ham on 6 slices veal & cover each slice of ham with remaining slices of veal. Mix bread crumbs & flour with salt, pepper & paprika to taste and dip each veal sandwich into crumb mix. Place veal sandwiches on platter and refrigerate overnight. Mix eggs with 4 T. water and 1/2 t. salt. Place oil & butter in skillet & heat. Dip veal in reserved crumb mix, dip in egg mix, then dip in crumb mix again. Brown on both sides in hot oil mix and place in shallow baking pan. Bake at 375º for 15 min. Combine stock, tomato paste and wine in saucepan and bring to a boil. Reduce heat. Mix cornstarch with 2 T. water and stir into stock mix. Cook til thickened stirring constantly and serve over veal.
