1 pound marrow fat beans
1 small onion, chopped
Lots of salty ham, chopped
2 teaspoons vinegar
1/16 teaspoon black pepper
˝ teaspoon salt
˝ teaspoon dry mustard
12 – 16 tablespoons granulated sugar
2 tablespoons catsup

Soak great northern or navy beans overnight. Discard any defective beans. Simmer in water until skins begin to burst. Add remaining ingredients. Boil 15 minutes. Put in bean pot. Bake at 250 degrees for 6 - 8 hours. Don’t let get dry – add more water as needed. Top with strips of bacon for the last 45 minutes of baking.

My husband’s older brother, Anthony, was a business man in Sunbury, and he dined out frequently. The Sunbury Hotel offered the above item, and Anthony asked for the recipe for years. Finally, the hotel relented, and he was allowed to buy the recipe. It is always made for our Easter buffet, and we made it frequently for family picnics. When asked about his favorite vegetable, my husband Mark always replied that it was baked beans.
