8 large potatoes - boiled (I like red skin or yukon w/skins on)
2 ribs celery - diced
1 onion - diced
salt & pepper to taste
1/4 - 1/2 c. sugar
1/3 c. vinegar
1/3 c. water
6 slices bacon - fried crisp then drained keep fat in skillet
1 T.parsley for color

Directions:
Cool & dice potatoes. Add celery, onion & chopped parsley. Set aside. Combine sugar, spices, vinegar and water; mix well into hot bacon fat and stir until thickened. Pour over potatoe mixture, add bacon & toss lightly to mix. Serve warm. Mayonaise may be added to moisten - Can be made ahead and heated for about 20-30 minutes in 300º oven.
