1 C chopped pecans (toasted at 350 for 10-12 min, stirring half-way through
12 whole graham crackers
1 C firmly packed brown sugar
3/4 C butter
2 TBSP whipping cream
1 tsp vanilla
1/4 tsp kosher or sea salt
1 C dark chocolate chips - if doing the chocolate pecan caramel bars (I used semisweet)

Line 15x10 jelly-roll pan with aluminum foil and lightly grease
Arrange graham crackers in single layer in pan slightly overlapping edges
Combine sugar, butter, and whipping cream in saucepan bringing to a boil over medium heat, stirring occasionally.
Remove from heat and stir in vanilla and pecans
Pour butter mixture over crackers, spreading to coat
Chocolate option:
Top warm bars with 1 Cup chocolate chips, let stand 3 minutes and spread chocolate over bars.
Bake at 350º for 10-11 minutes or until lightly browned and bubbly, immediately sprinkle with sea salt.
Cool completely and break into bars
