2 1/4 cups whole wheat flour
3/4 tsp. baking soda
1/4 tsp. salt
2 eggs, beaten
1 tsp. vanilla
3 bananas, mashed
1/4 cup plain yogurt
1/2 cup honey or agave or maple syrup
1/3 cup oil (canola or coconut)
1/2 cup sugar

Preheat oven to 350º. Grease loaf pan or use paper liners in muffin tin (about 18) Whisk together flour, baking soda, and salt. In separate bowl, mash bananas. Mix in yogurt, honey, eggs, oil, and vanilla. Fold into flour mixture just until blended. Pour into pan. Bake 40 to 50 minutes or until toothpick comes out clean. (Bake 12 to 15 minutes for muffins.)

*Note: You can substitute applesauce for oil to lower the fat.
