1 1/2 lb. skinless, boneless chicken breasts, cubed.
1 - 15 oz can diced tomatoes with juice
1/2 c. water
1 tbsp. minced garlic
1 - 6 oz. box chicken flavoured dry bread stuffing mix
2 c. shredded mozzarella cheese (alt. cheddar cheese works well too)
1 tbsp. Italian seasoning

Preheat over to 400º Spray a 9x13 glass baking dish with cooking spray.
Place the chicken in a layer into the bottom of the baking dish. Stir together tomatoes, water, garlic and stuffing mix in a large bowl; set aside to soften. Sprinkle the cheese on top of the chicken, then sprinkle with the Italian seasoning. Spread the softened stuffing mixture on top. Baked uncovered until the chicken cubes have turned white and are no longer pink in the centre, about 45 minutes.
