1 c. sugar
3/4 c. vegetable oil
2 eggs
1 c. all-purpose flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1 c. freshly shredded carrots
1 can cream cheese frosting

Directions:
Directions:
Preheat oven to 350º. Spray with cooking spray a 13x9 in baking pan.
In a large bowl, using an electric mixer on medium, beat sugar, oil and eggs until light. Stir in flour, cinnamon, baking soda and salt until well combined. Gently stir carrots into batter. Pour batter into pan. Bake about 25-30 min (until toothpick comes out clean). Cool completely. Spread uncut bars with prepared cream cheese frosting. Drag a fork through the frosting on a diagonal to decorate. Cut into 2-in squares; remove from pan.
