1 c. warm water
1 c. warm milk
1/3 c. sugar
1/3 c. butter, melted
1/4 c. honey
1 1/2 tsp. salt
1 egg, beaten
1 c. whole-wheat flour
1 pkg. yeast
4 1/2 to 5 c. all purpose flour
1/2 c. wheat germ or wheat-heart cereal, optional

Oven: 350º ~ Yield: About 3 dozen rolls
In a large mixing bowl, combine warm water, milk, sugar, butter, honey, salt, beaten egg, and whole wheat flour. Mix well. Stir in 2 c. of remaining flour and wheat germ if using. Add yeast and mix well. Add enough of the remaining flour to make a soft dough. Turn dough onto lightly floured surface and knead until smooth and elastic, 5 to 7 minutes. Shape dough into a ball and place in a greased bowl, turning once to coat top. Cover bowl with a thin, kitchen towel and let rise in a warm place till doubled in size, about 1 hour. Punch down and divide dough into 3 equal parts. Roll each third on a lightly floured surface to make a circle about 3/8-inch thick. Brush dough with melted butter. Using a pizza cutter, cut dough in fourths and then each fourth into thirds (12 pieces). Roll up starting at long edge. Place on baking sheet, cover and let rise until doubled in size (30 to 45 minutes). Bake 12 to 5 minutes. Brush tops with melted butter.
