2 c grits
1 t salt
7 c water
3 eggs, separated
3 T butter
3 T flour
1 1/4 c milk
1 c grated cheddar cheese

Directions:
Directions:
Cook grits and salt in water boiling until thick. Add egg yolks, one at a time mixing well in between.

In a saucepan, cook butter, milk and cheese over a low heat until cheese has melted.

Add cheese mixture to grits.

In a small mixing bowl, beat egg whites until stiff. Fold into grits.

Pour mixture into casserole dish. Bake 350º for 45 minutes.
