1 whole fryer (or 5 to 6 breasts)
3 bay leaves
4 ribs celery, chopped
1 large onion, chopped
1 t garlic powder
1 t cavender's seasoning
1 t basil
1 can Rotel tomatoes
1/2 c rice
8 oz frozen mixed vegetables

Directions:
Directions:
Place chicken in large pot, cover with water. Add bay leaves, celery, onion, garlic, cavenders seasonings and basil. Cook until tender, about 45 minutes.

Remove chicken from broth and allow to cool. Remove bones and skin. Cut into bite sized pieces.

Meanwhile, put kettle of broth back on stove. Add tomatoes, rice and frozen vegetables.

Simmer 30 minutes, then replace chicken into pieces.
