1 Tablespoon salt
1 1/2 pounds boneless stew meat
1 Tablespoon vegetable oil
5 1-inch slices ginger
4 cloves garlic, crushed
4 to 5 cups water
5 to 6 pounds luau leaf

Directions:
Directions:
Salt meat and brown in hot oil with ginger and garlic. When nicely browned, add water and cook until meat softens, about 1 hour.

Wash leaves and tear into pieces. Add one large handful at a time to meat. Cook until leaves wilt. Turn meat over and add remaining leaves. Continue cooking, making certain that there is enough liquid to prevent burning, add more water as needed. Continue to turn leaves and meat. Simmer until leaves are soft and have no bitter aftertaste. Add more salt if needed. Discard ginger and garlic and serve.
