For the marinade:
1/4 cup balsamic vinegar
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 tbsp. yellow mustard seeds, cracked

For the sandwiches:
3 12-14 oz ribeye steaks
4 oz. Gorgonzola, crumbled (or 2 tsp of horseradish)
1/2 cup light sour cream
Salt and black pepper
1 baguette or 6 crusty pistolettes, split lengthwise
2 cups lightly packed arugula
Ripe tomatoes

1) Combine the marinade ingredients in a large ziplock bag, add the steaks and marinate for 30 minutes to 2 hours in the refrigerator, occasionally inverting the bag.

2) Grill the steaks on a medium-high fire OR use a grill pan (this recipe works well in a grill pan) preheated on medium-high heat. Drain the marinade from the steaks and grill about 4-6 minutes on each side for medium rare (less for thin ribeyes). Let the meat rest for 10 minutes, then slice across the grain into thin slices

3) Mix the Gorgonzola and sour cream in a small bowl to make a thick spread, season lightly with salt and pepper. Scoop out a little of the bread from the baguette halves, and spread the sour cream mixture on the bottom half of the bread.

4) Top the sour cream with arugula, and tomato slices if desired and then the warm steak slices. Salt and pepper lightly. Top with the other half of the baguette, cut into 6 sandwiches and serve immediately.

We saw this on TV one day and had to go get some steak to make these sandwiches. We cut the recipe down to serve 2. You can also use your favorite marinade.
