Cracker Barrel Meatloaf Recipe

2 lb lean ground beef
3/4 cup finely chopped onion
1/2 cup chopped green pepper
2 large eggs
1 tbsp. salt
3/4 tsp. black pepper
1 can of diced tomatoes (you can use flavored if you like but to get the most authentic CB flavor, use plain diced tomatoes)
2 1/4 cup dry, grated, plain breadcrumbs (or biscuit crumbs, pulse in food processor)
1/2 cup catsup

Preheat oven to 350º

Combine all ingredients and press into loaf pan.

Bake for one hour. Drain off the fat and pour catsup on top, bake for another 30 minutes, occasionally check to be sure catsup is not burning.

If the diced tomatoes seem to be in large chunks, pour the can into a small bowl and mash gently with a potato masher, but do not turn the chunks into tomato soup.

This is my favorite meatloaf recipe. It tastes much like Cracker Barrel meatloaf. This does make a large meatloaf, but supposedly it is a cut down version of the actual Cracker Barrel recipe, which called for several pounds of beef. You can substitute a pound of pork for one pound of beef to get a subtly different texture and flavor.
