1 1/2 c. cooked white rice
2 c milk, divided
1/3 c. sugar
1/4 tsp. salt
1 egg, beaten
2/3 c. raisins, (optional)
1 T. butter
1 tsp. vanilla
Nutmeg and Cinnamon

Directions:
Directions:
Combine rice, 1 1/2 c. milk, sugar, and salt in a heavy saucepan. Cook over medium heat stirring occasionally until thick and creamy; about 15 min. Blend thoroughly remaining 1/2 c. milk with the egg in a separate bowl.
Stir this milk/egg mixture into rice mixture and add raisins if using. Cook 2 min. longer, stirring constantly. Remove from heat. Add butter and vanilla and stir to combine. Spoon into one or individual serving dishes. Sprinkle nutmeg and cinnamon over the the top according to taste. Serve lukewarm or chilled.
