6 eggs separated
1 Tbsp flour
1/4 tsp pepper
1/4 tsp salt
1 4 oz. can whole green chili's- seeded and rinsed
1/2 lb Monterey Jack cheese sliced

Directions:
Directions:
Beat egg whites until stiff. Mix flour, salt and pepper with the egg yolks. Fold in egg whites. Pour half of the mixture into a greased 9 x 13 baking dish. Slit each chili lengthwise, seed, rinse and dry. Lay chili's flat over the egg batter, then cover with cheese slices. Pour rest of egg batter over the cheese. Bake for 25 minutes in 325º preheated oven. Serve with salsa if desired.
