• 8 potatoes
• ¼ cup butter
• 3 cups sliced mushrooms
• Salt
• Pepper
• 1 ¼ cup sour cream
• 1 cup shredded cheddar cheese
• 6 sliced green onions

Directions:
Directions:
Cook potatoes in boiling water, then drain and mash. In a separate saucepan, melt butter, then gradually add mushrooms, salt, and pepper and cook on medium heat until mushrooms are tender. Add sour cream, and 1/2 cup of cheddar cheese to mashed potatoes. Transfer to baking dish, then sprinkle mushrooms, green onion, and remaining cheese on top. Bake, uncovered at 350º for 30 minutes.
