3 lbs. Beef for stew, cut in 1 1/2 inch cubes
3 T. Olive oil
1/4 c. Flour
2 c. Peeled, seeded & chopped tomatoes
1 to 2 Cloves garlic, crushed
1 1/2 to 2 c. Beef broth
Additional chopped parsley ( optional)
1/8 t. Pepper
3 sprigs Parsley
2 T. Tomato paste
24 Pearl onions, peeled
1/3 c. Dry red wine
1 t. Salt

In large sauce pot or kettle, brown beef in oil. Add flour and garlic; cook and stir for 1 to 2 min. Add beef broth, tomato paste, salt, pepper and parsley. Cover and simmer 40 to 60 min. or longer til beef is tender. Add tomatoes and onions; simmer uncovered til onions are tender ( about 15 min.). Add wine. If gravy seems thin, make a roux of 1 T. flour and 1 1/2 T. butter, add to kettle and heat.
To reheat, place Beef Marengo in casserole and bake at 350º for 30 min.
