1 c. flour
1 c. water
1/4 tsp. salt
2 eggs

15 oz. carton Ricotta cheese
1/4 c. Parmesan or Romano cheese
8 oz. grated Mozzarella cheese
1 egg
1 Tbl. fresh parsley chopped fine
salt and pepper to taste

1 1/2 cups Marinara or Spaghetti sauce, either home made or store bought

Mix the first 4 ingredients, the flour, water, salt and eggs to form a noodle batter. Blend thoroughly and let stand for an hour or more in the refrigerator before frying.
In the meantime, make the filling. Combine the rest of the ingredients EXCEPT the marinara sauce. Mix well.
Now make the noodles. Pour just enough noodle batter in a preheated and greased 8 in. non stick fry pan to cover the bottom. Swirl it around like you are making a crepe, because, that is what you are basically doing! Fry briefly, only about 10 to 15 seconds and flip over. You do not want to brown the crepe.
Place the noodles on a paper towel to drain and then on wax paper. Repeat until all the batter is gone, placing wax paper between noodles so they don't stick together. You should have about 8 to 10 noodles...maybe a little more depending on how thin your batter is.
When you get all your noodles done, fill them with about 2 - 3 Tbl. of the ricotta filling and place seam side down in a baking dish. Pour marinara sauce over the stuffed noodles and bake in a preheated 350ºF oven uncovered for 20 minutes until hot and bubbly.
