1/3 to 1/2 cup sugar, plus 2 T sugar
1/4 cup water
3-4 medium-size Granny Smith apples, peeled, cored, and each cut into 8 wedges
6 large eggs
3/4 cup milk
3/4 cup all-purpose flour
1/4 teaspoon salt

Preheat oven to 425º.
In a 12-inch skillet (with oven-safe handle) over medium heat, melt butter, 1/3 to 1/2 cup sugar and 1/4 cup water to boiling.
Add apple wedges and cook for 15-20 minutes, stirring occasionally, until apples are golden and sugar mixture begins to caramelize.
Meanwhile, blend eggs, milk, flour, salt and 2 tablespoons sugar until batter is smooth.
When apple mixture in skillet is golden and lightly caramelized, pour batter over apples.
Place skillet in oven; bake pancake for 15-20 minutes or until puffed and golden

Serve iimmediately. (Options: serve with maple syrup and powdered sugar)
