1-1/4 cups orzo
4-6 artichoke hearts, quartered (canned and packed in water, not oil)
1 cup fresh assorted mushrooms, sliced
1/8 cup pine nuts
1/8 cup extra virgin olive oil
1 T red wine vinegar
1/4 tsp. salt
1/2 tsp black pepper
1/2 cup finely chopped fresh flat leaf parsley
1 tsp finely grated fresh lemon zest

Rinse artichoke hearts and drain thoroughly with paper towels; slice to desired size using only the most tender parts of the artichokes.

Cook orzo in a small pot of boiling salted water until al dente; drain in a colander,

While orzo cooks:
Saute sliced mushrooms for a few minutes; when almost done, add artichoke pieces to pan until heated through.
Lightly toast pine nuts on a cookie sheet in a 350º oven for 2-3 minutes.
Combine olive oil, vinegar, salt and pepper in a bowl.
Add orzo, pine nuts, artichokes, mushrooms, parsley and zest.
Toss to combine and serve warm.
