1 c. lukewarm water
1 tbsp yeast
1 tsp sugar
2 c. lukewarm water
⅓ c. sugar
⅓ c. melted lard (butter/olive oil or other fat)
½ tsp salt
5 c. flour

Directions:
Directions:
In a cup layer the first 3 ingredients and let sit about 10 minutes until yeast is foamy.
Meanwhile measure out in a separate bowl the water, sugar, melted lard, and salt.
Put 5 cups of flour on a counter top or in a bowl. Make a well in the middle and add the water fat mixture, mix a bit and add the yeast mixture. If using a bowl, move your dough now to a floured surface and knead adding more flour sparingly up to even 1-1½ cups more depending on the day.
Return to bowl and sprinle with a touch of flour and cover with a clean towel. Let rise a good hour to 1½ hours. Punch down and let rest for about 10 minutes. Will make 2 large loaves or 3 smaller ones, or 1 loaf and about 16 buns. Rise 40 minutes.
Once the bread is risen agian, cook in a 350º oven for about 35 minutes for a loaf, 25 mins or more for buns. Make sure you cook it enough.

NOTE: I let it rise in the oven with the light on
