2 lbs. hamburger
4 c. diced potatoes
3/4 c. chopped onion
3/4 c. shredded carrots
3/4 c. chopped celery
3 c. chicken broth
1 tsp. basil
1 tsp. parsley flakes
2 c. Velveeta cheese
1 1/2 c. milk
1 1/4 c. sour cream
salt and pepper to taste
4 T. butter
1 1/4 c. flour

Directions:
Brown hamburger, drain. Melt 1 T. butter and saute onion, carrots and celery in a big soup pot. Add hamburger, broth and potatoes. Bring to a boil, reduce heat and simmer 10-12 minutes. While that is cooking, melt 3 T. butter and stir in 1/4 c. flour. Cook 2-3 minutes. Add flour mixture to the soup, stirring constantly to avoid lumps. Now add milk, sour cream, Velveeta, basil, parsley, salt and pepper. Heat thoroughly and serve.
